The Caves São Domingos vineyards are monitored throughout the entire vegetative cycle, from pruning to harvesting, thus ensuring a production of high sanitary and oenological quality. After the harvest, the grapes rest in a cold chamber for 24 hours, and after being selected, they are gently and slowly pressed. After decanting, inoculation is carried out with selected yeasts, fermentation occurs in stainless steel tanks and the base wine for sparkling wine with its individual characteristics of aromas and flavours emerges.

Under the "São Domingos BAIRRADA DOC" reference, other brands have appeared, such as "Lopo de Freitas", "Elpídio", "Quinta de S. Lourenço" and "Volúpia".

Caves São Domingos owns and controls more than 100 hectares of vineyards in Bairrada. All vineyards are under "Integrated Protection", obeying a strict standard, both in working conditions and well-being of operators, and in the respect and preservation of nature, which reflects our concern for the environment, biodiversity and its conservation.

The wine tourism has captivated thousands of visitors by the beauty and unique galleries excavated in the rock and by the remaining spaces such as the Baga room, dedicated to tastings and samplings, the Museum allusive to the 84 years of History, exposed in the Bairrada room, and the Wine Shop, which complement the visit to this remarkable space of Bairrada references.
